Baingan ka Bharta

Brinjal: 1 number (Big Size)

Onion: 1 Number (Medium Size)

Tomato: 1 Number (Medium Size)

Green chilly: 1 number

Garlic: ½ teaspoon

Ginger: ½ teaspoon

Turmeric powder: ½ teaspoon

Kashmiri red chilly: ½ teaspoon

Saunf: 1 tsp ( powdered)

Cinnamon: 1 small piece (powdered)

Coriander leaves: 1 tablespoon

Salt: as required

Mustard: 1 teaspoon

Oil: 2 tablespoon


Put Brinjal on low flame & allow it to cook till its skin cracks & brinjal becomes soft.

Switch off flame & allow it to cool.

Peel off the skin & mash the mix.

Heat oil in pan, add mustard then add finely chopped onion, greenchilly sauté well.

Add chopped tomato & mix well. Add turmeric, kashmiri chilly powder & mix well.

Add salt, powdered saunf, cinnamon & mix well.

Add mashed brinjal to it & sauté for few seconds , then add chopped coriander leaves & cook for 5 – 6 minutes.

Switch off flame & serve.
